Known as Pilgrim Scallops due to their shells marking the Camino de Santiago, these scallops are found throughout Galicia. Unlike the scallops found here in the US these are purged of any sand but the ‘frill’ is left attached to the abductor and lends a sweetness and depth.

Packed by hand in the ubiquitous Galician Sauce of paprika, with the addition of tomato and onion, this tin is delightful right from the tin with crusty bread or brightened up with the addition of lemon of picked soft herbs.
